PARIS — The bustling city of Paris is experiencing a culinary renaissance, spearheaded by a group of Tarlacños who embody determination and resilience. Although their initial request to Olympics double gold medalist Carlos Yulo and his girlfriend Chloe, who were in France at the time, for a taste of authentic Filipino cuisine was not immediately met, a serendipitous discovery sparked an extraordinary culinary journey.
Amidst the charming streets of Rue de la Faisanderie, a familiar fragrance filled the air, drawing the attention of passersby. Could it be? Adobo in Paris? Yes, indeed: welcome to Adobo Paris!
This Filipino-French fusion restaurant has become a sensation not only within the Filipino community but also among the French locals and other Europeans. The menu offers a delightful array of Filipino favorites from sizzling sisig to rich kare-kare and, of course, the beloved adobo—the latter cooked in traditional Tarlac-style adobo that has captivated the palates of the French, often accompanied by a glass of fine wine.
"I present it with a touch of French technique, but the taste, very Filipino. The flavor is authentically ours," said RV Flores, one of the restaurant's co-owners along with Dominique Tiru and Julius Ladera.
The trio ventured into various jobs in France before establishing their dream restaurant.
"I took on all kinds of jobs—babysitting, housekeeping—to save up and gain diverse experiences from other Parisian restaurants before realizing our dream," Tiru said.
As patrons indulge in the delectable Adobo de Paris, the Filipino community continues to innovate, adding a twist to make the dining experience even more memorable. With a karaoke room for singing enthusiasts and those who enjoy unwinding after work, the restaurant has become a go-to spot for both locals and tourists alike.
Just like champion Carlos Yulo, who envisions success not just for himself but for the Philippines, Ladera said, "Our mission is to truly introduce Filipino cuisine. It's about time. We hope our efforts can make a difference."
In the heart of Paris, where dreams meet flavors, Adobo Paris stands as a testament to Filipino pride and culinary excellence, inspiring a cross-cultural culinary celebration that embraces the best of both worlds.
